Alright usually I PROMISE I will refrain (or at least attempt to) from talking about things that are school related and ordinarily boring but this really peeved me. As an undergraduate in college we spent a good amount of time talking about IEPs (individualized education plans) and No Child Left Behind, before we were thrown out in to the world of student teaching. In class I listened, and paid attention but did not put much attention in to the problems that may revolve around classroom teachers and IEPs.
My younger brother (who really is not little any more), keeps complaining that one of his classroom teachers is taking of points on his tests and homework for his handwriting. OKAY, maybe maybe I could understand where this teacher is coming from, hand writing is important. BUT the kid has an IEP, which specifically states that he needs accommodations (using a computer), due to his handwriting.
SO let me ask this, if a childs IEP requires that they recieve certain accomdations, and the child is NOT recieving those accomadations, should the teacher be able to reduce a grade, due to a factor she could prevent through following the IEP?!?! I think not. And to be honest this really pisses me off.
In the beginning this teacher did not even know he has an IEP. Shouldn’t all teachers read their students IEPs?? How can they provide their students with the best education possible, if they don’t even know their students strengths and weakness? Then, his case manager spoke with her, and told her that for testing he is suppose to leave the classroom (so he can use the computer), during the next test she once again, did not provide him this accommodation. SERIOUSLY??? DO you value your job? Are you aware that your district is making layoffs? An IEP is a federal document, and should be enforced!! It was written in a federal document for a reason.
Tonight when dinner time came around I was feeling two things, hungry and lazy. Which left me with two options, eat the piece of left over pizza? or throw something together quickly? As school recently started and I have little to no time to exercise I opted for the healthier option and made a salad.
Okay, yes I am aware that I recently ranted about how a salad does not constitute as a meal, but this was no ordinary salad.. It was more of a mixture of deliciousness!! Below is the recipe. It is by far a quick and easy recipe that requires no hassle.
What you need:
1/2 of a medium sized tomato
1/2 of an medium sized avocado
1/4 a cup of chick peas 1/2 cup of precooked (and cut) chicken
1/4 cup fresh mozzarella
1 1/2 TBS balsamic vinaigrette
Handful of sunflower seeds
Fresh mixed salad greens
A sprinkle of salt and pepper
This part is fairly self explanatory. Put the lettuce in bowl..Cut EVERYTHING up (but the sunflower seeds, dressing, and lettuce) Throw all of the chopped ingredients on the lettuce.. Sprinkle on the sun flower seeds, salt, pepper, and dressing and YUM. a delicious salad that us not salad like at all:)
Reflecting back on this dinner creation.. It was more of fresh summer concoction then a green salad.. Maybe the Spanish version of a Waldorf salad?! Who knows, but I love avocados and it was yummy. The next day I even had left overs for lunch.. Which I happily ate.. This time I added the other half of the avocado:-)

Tonight I made a delectably delicious dessert… and there was only THREE word to describe it HOLY COW WOW. Seriously WOW. What is there not to like about a ginormous chocolate chip cookie baked into a pie with a scoop of vanilla ice cream on top?! I am pretty sure it would be a sin to NOT enjoy it..
Here is this super easy recipe that I got right off of the Nestle website
Prep TIme: 15 minutes
Bake Time: 55 minutes
Servings: 8 (large pieces)
What you need:
- 1 unbaked pie shell
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 3/4 cup (1 1/2 sticks) butter, softened
- 1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
- 1 cup chopped nuts (pecans!!)
- Sweetened whipped cream or ice cream
1. Pre-heat the oven to 325° F.
2. Beat the eggs in a large mixing bowl.
3. Beat in flour,white sugar and brown sugar. Beat in butter (softened but not melted).
4. Stir in the chocolate chips and nuts.
5. Spoon the tasty filling into the pie shell
6. Keep the dough eating to a minimum (I know it is hard)
7. BAKE for 55 minutes or until you can insert a knife into the middle of the pie and have the blade come out clean.
8. Allow to cool then enjoy!
They recommend that you serve this with whipped cream or ice-cream…SCREW the whipped cream, GO for the ice cream. The ice-cream should not be a recommendation it should be a must, a done deal. There is NOTHING better then ooey gooey chocolate chip cookies with vanilla ice cream on top….
I should probably own up and say that I did not follow the directions very carefully as a prepared this… I put an additional layer of pie crust on top (Don’t pies usually have the dough on the top and on the bottom??). Well, it was still delicious. The extra layer of crust gave great contrast to the sweetness of the cookie. I’ll also admit I used 2 cups of chocolate chips instead of the 1cup… what can I say besides I like chocolate?
Last thing I am gonna say about this… I may or may not have had more then one helping and will definitely be going to the gym tomorrow.. then maybe when I get home I can have another piece? enjoy.

Tonight my boyfriend’s mother asked us to make dinner… Immediately he wanted to make something healthy, his suggestion… salad. Okay, I am all for salads.. but is that really what someone wants for a main course?… me personally??!?! definitely NOT, last time I checked I wasn’t a bunny rabbit. A salad is meant to be a side not the main dish. As for the healthy part that I could agree with him on.. so I went online to my go to magazine for a quick and easy recipe (cookinglight).
What did we decided on? Tamale Casserole not only was it DELISH but it satisfied my Mexican craving for the night (be prepared, I tend to have lots of Mexican cravings). I will clarify that by no means is this a traditional Mexican Tamale.. but it was still tasty none the less. I also must share that I found this recipe on cookinglight.com and modified it to meet the needs of my own fat ass…
Prep Time: 15 minutes
Serving: 8 (enough to feed a family of 5, and those I ate with eat… ALOT)
Here is what you will need:
- 3 cup preshredded Mexican blend cheese
- 1/3 cup fat-free milk
- 1/4 cup egg substitute (Egg Beaters)
- 1 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 1 (14 3/4-ounce) can cream-style corn
- 1 (8.5-ounce) corn muffin mix (Jiffy)
- 2 (4-ounce) can chopped green chiles, drained
- 1 (10-ounce) can red enchilada sauce (such as Old El Paso)
- 2 cups shredded cooked chicken breast
- Fat-free sour cream
How to prepare it:
1. First and foremost preheat the oven to 400°.
2. Combine 1 cup of cheese with the next 7 ingredients (cheese through chiles) in a large bowl, stir the mixture using a wooden spoon until moist.
3. Coat a 13×9 inch pan with cooking spray and pour the concoction in the pan (you can also use two 9×9 pans).
4. Bake at 400° for 15 minutes or until the corn bread mixture looks set.
5. Poke the corn bread with a fork
6. Pour enchilada sauce over top, followed by the chicken and the remaning cheese.
7. Bake the casserole at 400° for 15 minutes or just until the cheese melts.
8. Remove from oven; let stand 5 minutes.
9. Enjoy!! (best served with sour cream)
It was not just my opinion that this recipe was a keeper! We served it with a simple green SIDE salad (Luis’ initial dinner idea)

I must admit to my one guilty pleasure regarding reality TV.. the Bachelorette. I love EVERYTHING about it from the drama to watching the sexy men. I know it is considered a “sin” show but I can’t help but love it.. It could be worse… at least I am not addicted to some of those other shows like Sixteen and Pregnant and Bachelor Pad.. right?!?
Okay so I also know that it is a little late in the bachelorette season to write a blog about it… but I can’t help myself as I watched the last episode with my boyfriend who would NOT converse with me about it. But here are my opinions regarding the boys (the “FINAL FOUR”)…
Not going to lie… I love LOVE love Ames.. He is perfectly dorky which makes him adorable… Not to mention that he is incredibly intelligent and funny in a devastating way. I don’t care if he can’t fight, and do not think it makes him any less of a man… he still is beautiful and has a bod. He is 95% my type of guy witty, charming, and he has a BRAIN (I would like to see have a bit of edge). He may be the only bachelor on the show who can carry an intelligent conversation. My one reservation when it comes to Ames is… Yale, Columbia, and Harvard… REALLY!?!?! C’mon yayy for the Ivy’s but REALLY?!?! I may only be saying the because my boyfriend went to UPenn and I have sat through countless Penn football games… but still!
Okay on to JP. JP is just sexy, and damn does he look good in a tux. For what the cameras choose to show us I think that he is genuinely into Ashley and she seems completely comfortable and at ease with him. It may be just my opinion (coming from a girl who has been with her boyfriend for 5 years) but it says a good deal about your relationship when you can be completely comfortable with a guy in your pj’s and no makeup.. a lot more anyways then when you always have to dress up and go on fancy dates to impress them. I LOVED that they could just veg and be them selves with one another. Plus they seem to have a sizzle. I must say… I would bet the J.P. comes out as the winner. There is nothing better in a serious relationship then having both wicked chemistry and being able to be yourself with the other person
Constantine… not much more to say, then not a fan. He looks a whole lot like Ben (it is easy to see Ashley has a type), but I see absolutely NO chemistry between him and Ashley. He may be a good guy but he seems..BLAH BLAH BLAH
and lastly… Ben. I like him but… he doesn’t appear to be the one for Ashley. It would be nice to have a man who makes his own wine though.. YUM. One last comment. Yes, I said that Constantine and Ben are practically twins… yet, I find Ben attractive and Constantine… not so much.
Sorry for the limited comments regarding Ben and Constantine.. I guess it is clear I already have decided who would make my top two..But I would love all of your comments. Like I said I had no one to talk about this episode with and would love to hear your opinions :-)
